A Beginner’s Guide to Dim Sum

 

Dim Sum, a Cantonese cuisine tradition that originated in Hong Kong, has become a popular weekend brunch option around the world. In Cantonese, it is called "Yum Cha," which means "drinking tea." Traditionally, dim sum is served in small bamboo baskets or on small plates, and it is meant to be shared with family and friends.

Growing up in Hong Kong, I always enjoyed this tradition of eating with family and friends, surrounded by the loud crowds and enjoying tea and dim sum. In this guide, I will share some of my favorite dim sum dishes and where to find them in Anchorage.

 

Sui Mai

Steamed Shrimp Dumplings

Sui Mai is one of the most popular and classic dim sum dishes. It consists of a thin wheat dough wrapper filled with a mixture of ground shrimp, pork, and mushrooms. The dumplings are steamed until the filling is cooked and the wrapper is tender.

Shrimp dumplings are the most popular dim sum dish and are often the first one to be finished. That's why we order double portions to make sure we get enough.

 

Beef Balls

Beef balls are made from ground beef mixed with water chestnuts, soy sauce, and other seasonings. The mixture is then shaped into small balls and steamed until they are tender and bouncy.

The perfect beef ball should be bouncy and savory. It's a staple dim sum dish that everyone should try.


Steamed Bao Buns

Steamed or Baked Buns

Bao is a type of Chinese steamed or baked bun filled with various ingredients. The most common filling is char siu, which is a sweet and savory barbecue pork filling. The bun itself is made from a fluffy, white dough and is steamed or baked until it's light and pillowy.

 

Egg Tarts

Egg tarts are a sweet and creamy dessert that's the perfect way to end a dim sum meal.

Hong Kong-style and Portuguese style egg tarts are both popular variations of this classic dessert. Hong Kong-style egg tarts have a shortcrust pastry shell with a rich egg custard filling, while Portuguese egg tarts use puff pastry with a sweet and creamy filling. Local bakeries in Anchorage have combined both styles, using a Hong Kong-style pastry shell and a hybrid filling made with evaporated milk and flour for a silky, rich texture and a touch of creaminess from the Portuguese style, with a caramelized top for a crispy texture. The result is a unique and delicious dessert that's a must-try for anyone looking for something new!
